Fall Recipes

Fall weather is starting to make soup sound really good! Can’t you just smell the aroma and feel the coziness of Hamburger Garden Soup and Garlic Cheese Biscuits warming your home on a chilly day?- Both recipes are submitted by Kimberly Lorenz
Hamburger Garden Soup
1 lb. ground beef

1 cup chopped onion

1 garlic clove, minced

4 medium tomatoes chopped OR 1 can (28 oz.) diced tomatoes, undrained

2 cups fresh or frozen corn

2 cups water (or you may choose to use beef stock instead)

3 T. minced fresh parsley OR 1 T. dried parsley flakes

2 T. minced fresh basil OR 2 tsp. dried basil

2 T. minced fresh thyme OR 2 tsp. dried rosemary, crushed

1 tsp. salt

1/2 tsp. pepper

In a large suacepan, cook the beef, onion and garlic over medium heat until the meat is no longer pink; drain. Add the remaining ingredients and bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until heated through. About 5 servings.

Garlic Cheese Biscuits
2 cups buttermilk baking mix

2/3 cup milk

1/2 tsp. Italian seasoning

1/2 cup shredded cheddar cheese

1/4 cup melted butter

1/4 tsp. garlic powder

Mix top 4 ingredients. Drop by spoonsful on a greased cookie sheet. Bake in a 450 degree oven for 8-10 minutes. Stir the garlic powder into the melted butter. Brush with butter/ garlic powder mixture after coming out of the oven.Garlic Cheese biscuits
